Mexican Meatball Soup

I came across this recipe for Mexican Meatball Soup and new I had to try it.  The prep time says 10 minutes, which I think it took 4.  The ingredients are all things I typically have around so no shopping trip needed – yea! You literally throw all the ingredients in the Slow Cooker and come home 6 hours later to a delicious family friendly meal.  Talk about keeping it simple.  And healthful too.  Under 300 calories a serving and loaded with protein and fiber.  I’ll add a quesadilla on the side for the kids to keep them happy.  {They don’t call anything a meal without some melted cheese!}

It’s hard for me to pass up a recipe with 5 ingredients really, since I love to keep it simple.  I also love to use my slow cooker whenever I can, just makes life easier.  Here’s a link for a printable version of Mexican Meatball Soup based on the recipe found in The Better Homes + Gardens “Skinny Slow Cooker” magazine.

I think I’ll have to try this one. We don’t do corn around here, but everything else is in my pantry, right down to the same brands you use, lol. Are the meatballs gluten free? Our oldest has celiac. I usually just make them in large batches and freeze them. It’s really hard to find gluten free meatballs that are prepackaged. What’s the brand?
