Have you ever been to a Soup Swap?  A couple of years ago I had an idea to host a Soup Swap.  I figured I was not the first person to come up with the idea so I turned to my friend google, guess what? There’s actually a National Soup Swap Day.  Seriously.  It’s in January, this year it was January 26, 2013 and it was the 7th annual. Feel left out?  Don’t.  There’s even a Facebook page in its honor.  Of course you can host a Soup Swap for your friends anytime.

There are a couple of ways to go about hosting a swap.  Part of my goal was for each guest to bring enough soup for each of us to go home with several meals all ready to serve.  I asked each guest to bring 7 Qts of soup. This would be enough for each of the 7 other guests to leave with seven 1qt containers of soup.  1 qt will feed a family of 4 with a side sandwich or salad.  To save space I decided to package soup in large ziploc freezer bags. Soup could be frozen flat.  Tip: Be sure to test your freezer bags, not all bags are leak proof!  If you choose to do smaller portions for your guests to simply try at your party and go home with a recipe, Garnish has the perfect container for you.

Here is one of our family’s favorite soups.  Roasted Tomato Soup via The Barefoot Contessa.

Saute onions, garlic, red pepper flakes in olive oil and butter.

Add a can of roma tomatoes, fresh thyme, basil, and low sodium chicken broth.

Add the roasted tomatoes to the pot and blend with one of my favorite kitchen tools, the immersion blender by Cuisinart.  It comes in 20 different fun colors.  The best $30 you’ll spend this year.

Wow, a soup exchange sounds like such a fun idea … and would you believe I just put one of those hand mixers in my cart on Amazon yesterday?!? I wasn’t 100% sure I wanted to take the plunge, but now I will :) Thanks! and that soup looks fabulous!
