Pies and Pops

Isn’t Rhubarb incredibly beautiful? This pie making was perfect timing. My older kids just returned from a week at a summer camp on a farm in which they helped harvest rhubarb and even tried some plain and raw – and they still wanted to make this pie! Rhubarb is not one of those food that you try raw and say YUM let’s put it in a pie! Of course I took this moment of ‘flow’ as I like to call it, and ran with it! I love when our lives cross over into other areas, it makes learning so much more interesting. I’ll admit it though, I took the easy way out, and bought a pre-made crust. So much more fun for me this way! I wanted to let you all know that you HAVE to try this recipe for Strawberry Rhubarb Pie. It’s was the yummiest part of summer yet! It turned out so beautiful! Unfortunately you won’t get a real looks-y because I took some of these photos in the evening, (not great light), but believe me on this one. So worth it!

Family Fresh Cooking

These do not fall into the simple category in my opinion. I was fooled by the short ingredients list to think these would be so easy to make with the kids this 4th of July. Boy was I wrong! Of course I made them anyway, but took note of why these will not be in my future repertoire. First, I had to cook both berries separately. Then I had to puree both types separately. Then, I had to freeze each layer separately for 3 hours each. And the real kicker was that I wasn’t able to get the stick/top into the middle layer because it was obviously already frozen when I put the last layer in so I had to leave it out about an inch. This wouldn’t have been such a pain if only I wasn’t using a freezer, you know the kind that is a pull out below the upper fridge so they wouldn’t even fit! I ended up freezing them without sticks and then had to practically drill a space to put a skewer in before my kids could eat it! So, no, this is definitely not a recipe for this simple blog. Here’s how they turned out.

Would love to try the pie but will skip the blueberry face.
