Lunch for Mom

If you are anything like me, making lunch a priority for myself is not an easy thing to do. You’ve likely skipped lunch, been too busy running around that you grab whatever and eat in the car, or my favorite, nibbling whatever is left from the kids plates!  Even though I love to cook, and have the best intentions, life can get away from me.  I have some simple dishes that I try to keep ready or easily tossed together so that I’m not stuck in a pinch.  If I put so much energy into what my family has for lunch, then I should put at least half of that into what I have for lunch.  I’d love to hear your ideas for your simple healthful favorite mom lunches too!

Eggs.  I love eggs for breakfast, lunch or dinner.  I especially like soft-boiled ones with a gooey warm center. YUM! Eat,Live,Run can show you how to make the perfect soft-boiled egg.

Another egg favorite of mine is the breakfast wrap.  This one is made with a hard-boiled egg which can be made ahead for a quicker prep.

Avocados.  I love to eat avocados.  They just might be my favorite food on the planet.  I will eat one with a spoon and nothing else!  Avocados make for a perfect sandwich alternative. You can put just about any veggie or salad on top and have a delicious healthful meal.  This recipe has a Cilantro and Lime Crab salad on top.

The Niçoise Salad is a favorite of mine.  I’ll make enough for dinner and be sure to leave leftovers for mom!

Wraps.  With so many varieties of wraps on the market now, it’s easy to make a lunch wrap that is lower in fat + calories than the traditional flour tortilla wrap.  Gluten-free wraps are widely available too.  Whole Foods sells an incredibly delicious gluten-free corn tortilla that I love.  This website 120 dollars food challenge has 20 lunch wrap ideas to choose from.

Not your mom’s tuna salad.  Do you have memories of icky sloppy mayo tuna salad?  I make my tuna salad with a teaspoon of mayo, mixed with greek yogurt and mustard.  I add whatever is around, avocado, celery, hard-boiled egg, apples, you name it.

Soup.  It’s a staple in our house no matter the season.  A small bowl leftover from the night before is my perfect meal.  Something about a warm bowl of soup seems so filling and comforting.  Sometimes I make a grilled cheese on the side, a small salad, or just soup all by itself.  This one was broccoli soup.

Chicken leftovers made into heavenly salad.  This is my favorite salad I’ve made lately.  I literally took leftover roast chicken, sliced avocado, sliced cucumber, and a sliced tomato from my garden and mixed it up.  So simple.  SO yum!

My other bit of advice is with leftovers.  Any fish, chicken, egg, pork, whatever you have left over from a previous night’s meal can be tossed with leftover rice, quinoa, veggies to make a well rounded light healthy mom meal.  I always try to make enough for a least a small meal for myself.  It saves me time and helps me eat right.

yes please, all of the above…;) one of my faves has always been quinoa salad, even before quinoa was popular…yumm.
