I have made Fish en Papillote dozens of times.  It is one of my favorite ways to prepare fish.  This method accentuates the fresh clean flavors of the fish and vegetables you add to each little package while maintaining my standard of being simple to make {and clean}.  This week, I continue, Cooking My Way Through La Tartine Gourmande by using her recipe for Fish en papillote.  The addition of the leeks, ginger, and cilantro give this version a zesty quality that I loved!

After meeting Béa Peltre, I have become even more inspired by her recipes.  Throughout the past year, I’ve made her Applesauce, Millet and oat apple muffins, Lemon and honey-flavored chicken, Spicy spaghetti, Mesclun salad, Honeydew + cucumber soup, Chocolate tahini cookies and of course Gazpacho.  I feel a little like the movie Julie and Julia while cooking my way through La Tartine Gourmande.  While, I am a fairly confident homecook, I appreciate Béa’s love of simple food that highlights local seasonal faire and her approach to gluten-free baking.
