Most of my recipes are essentially variations on a few simple favorites.  I believe that a good cook doesn’t need to know hundreds of recipes.  A good cook is one that knows a few basics well and can modify easily to make it seem like the have a deep limitless repertoire.

I came across this recipe recently, The Easiest Blackberry Pie Ever!  This recipe is just what it sounds like, easy as PIE!  If you’ve been reading here for a while you may remember how much I love pie, but prefer to leave the crust making to Pillsbury!  Turns out I’m not the only one who uses store bought pie crust.  I will be changing this one up with the seasons all year long!

To start the summer stone fruit season properly, I adapted the blackberry pie recipe to include June’s superstar, The Apricot.  It was incredibly easy, fresh, sweet, and perfectly summer.
