Six Summer Salads

It’s still summer time people!

The back to school ads are a major Summer Va-Cay buzz kill.

These summer salads will inspire you to maintain that summertime feel, eat outdoors, and devour all the summer flavors til the bitter end.

 Arugula + Watermelon Salad

Arugula, watermelon, 1 tblsp diced shallot, 1 tblsp thinly sliced mint, simple balsamic vinaigrette

Grilled Peach Salad

Corn, Avocado +  Tomato Salad

Spinach + Blackberry Salad

Baby spinach, 1/2 pint blackberry, {I like to add 1 sliced peach or nectarine}, blackberry balsamic vinaigrette

Tabbouleh Salad

The Barefoot Contessa’s Tabbouleh and Chicken recipe is in her Family Style cookbook.  This can be a side dish or a meal in itself.  I will often exchange the tabbouleh for pearl or african couscous or quinoa.  They all work really well in this salad.  The recipe makes tons!  Great leftovers for lunch.

Try these add-ons atop any salad for a summertime spruce up.

  • leftover corn cut fresh from the cob
  • peaches
  • watermelon
  • berries
  • garden fresh heirloom tomatoes

With the help of these super fresh + easy salads (and staying out of Target), you can definitely extend your summer till the first school bell rings!
