I like to try new variations of meals that my family already enjoys. Pancakes are one of those meals that have become more than just breakfast for us. We will have breakfast for dinner at least once a month and breakfast for snack more often than not. Here’s why pancakes are such a popular meal in our house:
1. I make up a double batch (easy for mom)
2. I make ahead at night (quicker for schooldays)
3. I use whole wheat or gluten-free flours (healthier versions)
4. I add ground flaxseed to every recipe (more omegas)
5. Freeze what you don’t eat (another meal is waiting and ready)
6. Pop in the toaster to heat frozen pancakes quickly (kids can make their own)

*Note on Kefir – Though it contains the same amount of calories, fat and protein as 1% milk, it is higher in probiotics and active cultures and enzymes for healthy digestion. It can be used as a milk substitute with cereals and granola and as a substitute for buttermilk in cooking.
