Lunchbox Energy Bites

I am always on the lookout for a simple to make snack for my kids that tastes great and fuels their bodies.  I have made many variations of these little Energy Bites.  They are easy to make, ingredients are always found in my pantry, and my kids love ’em.

Energy Bites (makes about 45 1″ balls)

2 cups gluten-free oats (any old fashioned oats are fine, just not steel cut )

1 cup almond butter (or peanut butter)

1 cup coconut flakes

1/3 c. honey

1/2 c. ground flaxseed

1/2 c. chia seeds

1/2 c. dark chocolate covered goji berries

1/2 tsp. sea salt

In a large bowl, mix everything together until well incorporated.  Chill in the refrigerator for 30 minutes.  Roll into 1″balls and enjoy!  Store in an airtight container for up to 1 week.

Try any of these variations depending on your family’s favorite ingredients.

chia seeds

sesame seeds

chocolate covered goji berries

mini chocolate chips (if using dairy)

sub sunflower butter or biscoff spread for nut-free version

Any possible suggestions for subbing the oats? We have an oat allergy in our house.

This is such a great question Janet. I have not tried these with anything other than oats. I have made other chewy granola bar types of snacks with puffed rice crisps, maybe give those a try.

I wish my mom made stuff like this for me when I was growing up. Your kids are truly lucky indeed! So many good ingredients in here.
