Eggs for dinner are a staple in our house. Especially in the summer.
I love them!
1. fried on top a salad.
2. scrambled in a wrap.
3. baked in a quiche along side a green salad.
4. hard boiled and sliced for any anytime snack.

I’ve been dreaming about Europe lately, maybe the summer time, maybe the olympics, maybe just a bit of the travel bug. I had a big craving for Tortilla Espanola. So I browsed the net and found a recipe from trusty Martha Stewart. I can see my Spanish friends cringing now. I know it’s not exactly the most authentic, but that’s what I’ve got! It was pretty easy, just a little time consuming. I adapted the recipe for my kids – one less potato, 1/2 the onion, 2 more eggs, 1/2 the parsley, and a little shallot (i’m outta garlic).

Served with sliced fresh heirloom tomatoes from my garden. YUM and YUM!
