Another awesome slow cooker recipe for you today! I can’t tell you how much I love my slow cooker. It makes life so darn easy to cook dinner. It’s especially rad in the winter with so many delicious creations that are soul warming wonders. This recipe was inspired by several curry recipes I’ve had my eye on lately. It is as simple as dicing up chicken and veggies, giving some coconut milk and spices a whirl in the food processor, and pressing start. How simple is that?!! You can serve it alone, on a bed of brown rice like I did here, or with your favorite grain. I like to add peas to mine, but my kids would probably freak out. It’s also common to use a touch of fresh ginger which I’ll be adding next time for sure. This recipe has just enough spice for parents, but not too much for the kids.
