Summer Rolls are one of those foods that I have wanted to try to make for a long time, but have always been nervous for some reason about using the rice paper.  Nervous, yes it’s silly I realize.  Maybe it was because I wasn’t even sure where to find them in my market.  But I was bound and determined to give it a shot even if they didn’t turn out all pretty like the ones in magazines.  I’m always looking for a new recipe to add to our repertoire. It was time to give them a shot.

My kids tend to try things they may not otherwise be interested in when they have a hand in the preparation, especially when it comes to stuffing or topping foods themselves.  Tacos, burritos, tostadas, pizzas, and baked potatoes are all favorites around here for that very reason.  They feel like they’ve made it all themselves.  My only requirement was that they include one veggie and one protein, the rest was up to them.

The rice paper was a little tricky to work with.  I recommend keeping a little dish of warm water nearby to dip your fingers in to prevent the wraps from sticking.  All the ingredients are fresh and healthy.  All are things my kids have tried in the past so my odds were high that these would be winners.

Summer Rolls are colorful and healthy.  They keep my kids eating the rainbow and that’s about as much as this momma can ask for in a meal.
