Remember my inspiration cakes?
Here’s how it all went down for me this week
Pilsbury White Cake box (i’m not paid to use this, just think it’s the best boxed cake mix around)
Since I decided to alternate colors for the layers, I needed to color my white cake using Wilton’s Icing Colors.
I started with just a small amount to test it out, then finished up the rest of the batter.
2 – 8inch rounds of purple cake. Can’t say i’ve seen that before!
I carefully sliced off the top of both cakes and place one of them face down on the pedestal. I used parchment paper to line the undersides of the cake to protect from the mess I was about to make.
Then I got to work on the white layers

Now for the rinse.repeat. part
This is the tricky step for me – frosting this enormous thing! When I bought the cake pans at Sur la Table they said to do a ‘crumb coat’ I nodded like I knew exactly what they were talking about because all my cakes end up with crumbs on them….decided I better find out what that means before continuing. It’s actually (for all those in my boat), a thin coat of frosting you apply before the finished nicer layer. Now we all know how to prevent those crumbs from surfacing.
Do you see how my layers aren’t the same size? how in the heck did that happen? who said baking is an exact science? I’ll be filling that in with more frosting for sure!
Here’s the final final
My daughter was thrilled when she saw it. Loved every bite of it! It was fun for me to try something out of my comfort zone in the kitchen, though I won’t be making these for every birthday, this cake sure was a beauty for this birthday!
