Amazing Chicken Noodle Soup

It’s no secret that I am obsessed with soup.  There are so many things I love about soup.  I feel so accomplished making a pot of soup.  The one-pot meal is not lost on me.  I appreciate simplicity.  I enjoy an easy prep and clean-up.  I am over the moon with excitement when my kids eat their veggies.  And the stories, every soup recipe seems to have a story.  But really, what it always boils down for me is simple beauty.  Soup is exactly that, simple nutritious beauty in a bowl.

Now that my ode to soup is public, I can tell you all about the impetus for this chicken noodle soup.  I had been craving my good friend’s recipe for Matzo Ball soup.  When I had my soup exchange a few years ago, she shared with us her grandmother’s recipe.  It was delicious.  Hearty but light. (another characteristic I love about soup)  As I wrote up this week’s menu and thought about my grocery list, I knew I’d change the recipe slightly, if for no other reason, but because I’ve never actually made a matzo ball before!  I was however, inspired by the recipe.  With a sick kiddo in the house, now was as good a time as any to make a big batch of Chicken Noodle Soup.

Chicken Noodle Soup is an age old soup that has always seemed to sound more complicated than it really is. This version took just over an hour to make and most of that was simmering time.  As with most every recipe I make, it needs to fall under the ‘is it simple?’ category.  It sure does!  This version is gluten-free and January Detox approved.

I like to use Andean Dream gluten-free pasta, but it’s hard to find. My local store only carries the big shells. They work well in place of the traditional noodle.
