A Yummy Treat + a winner

Thinking about after school snacks and lunch box ideas? Me too.

I made these yummy treats the other day for my family.

a bowl full of simple These no-bake granola bars were super simple.  I had all the ingredients already in my pantry + my family loved them.  I made a double batch to take camping with us over the weekend too.  With the list of processed ingredients in many granola/snack bars, this is one sweet treat I could feel good about!  It would be perfect in a lunch box or as an after school snack! I adapted the recipe slightly, but mostly this yumminess is credited to the cooking team over at www.twopeasandtheirpod.com.

Here’s where I made some changes.  Since I doubled the recipe, most ingredients required 1/2 c.  I trimmed the sugar and honey to 1/3 c.  I swapped the peanut butter for almond butter and added 2 tbsp. to make up for the lack in honey.  These Newman’s Own High Protein Pretzels pumped up the protein content too!

I made another swap at the last minute and decided to use up some dark chocolate covered Goji berries instead of the mini chocolate chips.  Hello antioxidants!

Hi- My daughter’s school has a “no nut policy” -ugh, so I am going to try this with sunflower seed butter. If it works, it may be a great mid-morning snack with a some fruit- stay tuned….

Yes. Sun Butter should be just fine. Have you tried Biscoff Spread? http://www.biscoff.com That would work too. Let me know how they turn out.
